
Extra Chruncy Sweet Potatoes Balls
Sweet potato balls are a popular bite-sized snack in Taiwan. They are chruncy on the outside and chewy on the inside. Our extra crunchy sweet potatoes balls are kids friendly, sugar free and easy to make.
Ingredients:
- 250g of steamed & mashed sweet potatoes
- 80g of glutinous rice flour
- 80g of rice flour
- 2 – 3 tablespoon of water
- ½ cups of bread crumbs
Method :
Peel and cut sweet potatoes into big chunks, steam for 15 minutes or until soft. Mash the sweet potatoes in a large bowl, add in glutinous rice flour, rice flour and water to form a dough. (Note: add the water a tablespoon at a time to avoid over moist dough.)
When dough comes together, roll them into a log (diameter 2 cm) and cut them into even pieces. Roll the small piece of dough to form a ball. Feel free to get your kids participating in this ball rolling process.
Coat the sweet potatoes with bread crumbs. Fry them in preheated oil over low heat, move the balls around during frying. The whole process of frying takes about 5 to 8 minutes.
Serve warm.
