
This homemade bagel recipe proves that you can make chewy bagel at your home with only few basic ingredients. They taste fresher and cheaper to make to.
Ingredients required are:
250g of all-purpose flour
4g of salt
160g of warm water
10g of sugar
2g of yeast
1 tablespoon of brown sugar for bagel water bath.
Step 1 – pre-ferment yeast
In a clean jug, melt yeast and sugar in warm water. Set aside for 5 minutes.
Step 2 – dough kneading
Mix pre-ferment yeast liquid into flour and salt, stir well with a spatula until flour are incorporated into the liquid. Knead the dough vigorously for at least 5 minutes, or used a stand mixer with kneading hook to work on the dough.
Step 3 – first proofing
Cover the doughs with a tea towel and allow the dough to raise for 30 minutes.
Step 4 – shaping
Lightly dust a clean, dry work surface, roll the doughs to expel all the air captured in the proofed dough. Divide the dough into 6 equal portions, and cover with a cling wrap and rest for 15 minutes.
Shape each portion into a ball, use your thumb to create a hole in the center of each ball, then stretch the hole until it is about 2 cm in diameter.
Step 5 – second proofing
Proof these bagels for another 30 minutes.
Step 6 – water bath
Fill a large pot with 1 littre of water. Whisk in brown sugar. Bring water to a boil, then reduce heat to medium-high. Drop bagels in, make sure they have enough room to loat around. Cook the bagels for 30 seconds on each side.
Step 7 – baking
Bake the bagels in a preheated oven at 180c for 20-25 minutes until golden brown.
